Ingredients

2 6-8 ounce of filet mignon
sea common salt
freshly basis black pepper
two tablespoons of ghee or olive oil
ane tablespoon of butter
1 tablespoon of chives chopped

Directions

  1. Remove steaks from refrigerator and allow to rest on counter for a half hour.
  2. Preheat oven to 425 degrees and move oven rack in eye position.
  3. Place oven-safety grill pan on cooktop. Plow oestrus to loftier and permit pan to estrus for ii-three minutes. The key to making a steak with a crispy seared outside is a hot pan.
  4. While pan heats, sprinkle both sides of filet mignon with common salt and pepper. Plow oestrus down to medium/high, add ghee or olive oil to hot pan. Carefully add steaks to grill pan.
  5. Cook steak until a brownish crust is established (nigh five minutes). Use tongs to plough steaks. Sear 2nd side and then place pan in oven. Cook in oven for v-9 minutes depending on the thickness of your steaks.
  6. Remove pan from oven, identify ½ a tablespoon of butter on each steak and permit steaks to 'balance' for five minutes. Garnish with chives and serve.
